NIGICHA’s Commitment
Commitment
NIGICHA offers onigiri (rice balls) and matcha (powdered green tea), traditional Japanese food culture, in a stylish Japanese modern café that is in tune with today’s lifestyle. Our focus is on carefully selected domestic ingredients and maximizing the appeal of rice and tea nurtured by the Japanese climate.
Our Commitment to Matcha
For our matcha, we use carefully selected tea leaves from the long-established “Nakajima Tea House” in Yame City, Fukuoka Prefecture, and carefully prepare and serve a high-quality cup of matcha with excellent aroma, flavor, and mouthfeel, using the skills of our craftsmen. We especially value the depth and delicacy of matcha, and are dedicated to bringing out the best in it. We also offer a wide variety of Japanese teas, including gyokuro, hojicha, genmaicha, Japanese black tea, and barley tea. Each tea has its own unique characteristics, and the calculated temperature of the hot water and brewing time enhances the flavor and allows you to enjoy a delicate taste with little bitterness. We are pleased to serve you with our wholehearted hospitality so that you can experience the traditional Japanese tea culture through a cup of tea.

Matcha
Matcha, known for its vibrant green color and rich flavor, is carefully ground with a stone mill using high-quality tea leaves from Yame. The balanced sweetness and bitterness of matcha pair well with traditional sweets and rice balls, making it a perfect choice for special moments. Enjoy its aromatic and smooth taste.
-
Sencha
Sencha is one of the most familiar types of Japanese tea, known for its moderate astringency and refreshing aroma. At our shop, we carefully control the water temperature and brewing time to maximize the umami of the tea leaves, providing a smooth and less bitter Sencha. It is the perfect cup for daily refreshment.
-
Gyokuro
Gyokuro, considered the finest Japanese tea, is characterized by its strong sweetness and deep umami flavor. Cultivated using the "shaded" method before harvest, it achieves a delicate and mellow taste. We carefully manage the temperature during brewing to bring out the tea’s unique character, offering a special aroma and richness.
Our Commitment to Onigiri
NIGICHA’s rice balls are made from carefully selected domestic rice, including specially cultivated Tsuyahime rice from Shonai-machi, Yamagata Prefecture and Koshihikari rice from Minami Uonuma. Both of these rice varieties are grown amidst the bounty of nature and are highly regarded throughout Japan for their high quality. Three types of rice are available: white rice, black rice, and brown rice.To ensure that the rice balls taste good even when cold, they are carefully handmade without using any preservatives, and each rice ball is prepared on the day it is made.
Additionally, we focus on presentation, adopting a style where the toppings are beautifully placed on the onigiri. Customers can enjoy wrapping the seaweed themselves after purchase, delivering an exceptional onigiri experience where the fragrant seaweed and the sweetness of the rice blend perfectly.
-
White Rice
Plump grains with a sweetness and umami unique to Koshihikari make white rice a perfect pairing with any topping. Its glossy finish and soft texture are hallmarks of traditional Japanese taste.
-
Brown Rice
Brown rice is rich in nutrients and has a toasty aroma. Its high dietary fiber content brings out a natural sweetness with every bite. Its firm texture makes it a recommended choice for health-conscious customers.
-
Black Rice
Also known as ancient rice, black rice features a unique chewy texture and beautiful purple color. Rich in anthocyanins and other nutrients, it offers a deep and flavorful taste with every bite, making it a highly sought-after choice.
-
Salt
To enhance the flavor of rice balls, we use carefully selected natural salt with a rich and mild umami. The perfect balance of salt brings out the natural sweetness of the rice and the flavor of the ingredients, creating a deep and simple taste. The pleasant saltiness has been thoughtfully crafted for your enjoyment until the last bite.
-
Nori (Seaweed)
We offer three types of nori (Standard, Special, Premium) to suit your preferences and needs. All of our nori is sourced from Ariake, one of Japan’s premier seaweed-producing regions, known for its rich aroma and crisp texture. When you purchase our rice balls, the nori is individually packaged, allowing you to wrap it yourself for the freshest flavor and crunch. Experience the perfect harmony of fragrant nori and sweet rice, delivering a moment of pure bliss.
