Product Description
Sockeye Salmon shipped directly from Hokkaido is prepared in a two-step process using mirin (sweet sake) and shio koji (salted malt), and then slowly aged to produce this luxurious product. The deep flavor and aroma of the salmon is enhanced by the time-consuming baking process.
Furthermore, the salt is carefully selected to enhance the flavor of the salmon. The perfect balance of salt maximizes the harmony between the sockeye salmon and Minami Uonuma Koshihikari rice.
The rice is made from carefully selected domestic rice such as Tsuyahime from Shonai-machi, Yamagata Prefecture and Koshihikari from Minamiuonuma, both considered to be of the highest quality in Japan. The grains stand out and the fluffy texture and natural sweetness of the rice enhances the luxuriousness of this rice ball.
*Because of the cooking process, brown and black rice may be served around noon. Until around 11:00 a.m., only white rice will be served.
