A luxurious rice ball with rice wrapped in pickled takana from Wakayama Prefecture and topped with spicy cod roe carefully aged in Torazuhama, Shiraoi Town, Hokkaido. The tangy taste of the takana and the sweetness of the rice intertwine perfectly, and the flavor that spreads in the mouth is exceptional.
Also known as mehari-zushi, this style of onigiri is a local delicacy from the Kumano region of Wakayama and Mie prefectures, and is said to have been named for its “eye-poppingly delicious” taste. It is a healthy and flavorful dish with the natural pungency and sterilizing effect of takana.
The mentaiko (cod roe) used is a first-class product made by slowly extracting the flavor from high-quality eggs. This rich mentaiko flavor blends perfectly with the fluffy rice. In addition, the carefully selected umami salt enhances the sweetness of the rice and balances the overall flavor.
