Design of NIGICHA

Design

NIGICHA is reimagining
Japanese food culture
through the lens of a cafe.

Matcha, perfectly prepared.
Onigiri, holding culture.
Nori, making a sound.
Pork miso soup, completed by temperature.

And a space with breathing room.

All for experiences
that quietly linger in everyday life.

The perfect cup

The perfect cup

Matcha isn’t just a drink for alertness.

It contains not only caffeine,
but also theanine,
which creates calmness and sustained focus.

Yame tea leaves.
First flush.
The character of each variety.

Authentic matcha for everyday enjoyment.

Not a trend, but a culture. A cup that brings harmony.

Matcha isn’t just a drink for alertness.

  • Matcha

    Matcha

Matcha, known for its vibrant green color and rich flavor, is carefully ground with a stone mill using high-quality tea leaves from Yame. The balanced sweetness and bitterness of matcha pair well with traditional sweets and rice balls, making it a perfect choice for special moments. Enjoy its aromatic and smooth taste.

  • Sencha

    Sencha

Sencha is one of the most familiar types of Japanese tea, known for its moderate astringency and refreshing aroma. At our shop, we carefully control the water temperature and brewing time to maximize the umami of the tea leaves, providing a smooth and less bitter Sencha. It is the perfect cup for daily refreshment.

  • Gyokuro

    Gyokuro

Gyokuro, considered the finest Japanese tea, is characterized by its strong sweetness and deep umami flavor. Cultivated using the "shaded" method before harvest, it achieves a delicate and mellow taste. We carefully manage the temperature during brewing to bring out the tea’s unique character, offering a special aroma and richness.

Still delicious when cold

Onigiri is Japan’s portable meal. That’s precisely why we don’t rely solely on freshly cooked rice. Shonai Town’s Tsuya Hime. Minamiuonuma-grown Koshihikari. Soaked overnight. Refrigerated storage. Water measured to the milliliter.
Shari cut immediately after cooking.

Designed to reach perfection when cooled.

So rice balls aren’t just a snack.

  • White Rice

    White Rice

Plump grains with a sweetness and umami unique to Koshihikari make white rice a perfect pairing with any topping. Its glossy finish and soft texture are hallmarks of traditional Japanese taste.

  • Brown Rice

    Brown Rice

Brown rice is rich in nutrients and has a toasty aroma. Its high dietary fiber content brings out a natural sweetness with every bite. Its firm texture makes it a recommended choice for health-conscious customers.

  • Black Rice

    Black Rice

Also known as ancient rice, black rice features a unique chewy texture and beautiful purple color. Rich in anthocyanins and other nutrients, it offers a deep and flavorful taste with every bite, making it a highly sought-after choice.

Communicate through sound

Nori (Seaweed)

Crunch.
Crackle.

Nori isn’t for wrapping,
it’s for making sound.

Rolling it backward
preserves the perfect moment.

Standard.
Special.
Premium.

Choosing is part of the experience.

Sound transcends language.

Completed by temperature

Grace Image

A rice ball that’s perfect when warm and still delicious when cool,
paired with a warm cup.

A hearty pork miso soup,
the element that completes the meal.

Nagasaki barley miso.
A gentle sweetness.

The balance of warm and cool.

Elevating a light snack to a full meal.

Design and Space

Design Image

Keep only what is essential.
Preserve tranquility.
Place just one important thing.

The spirit of wabi-sabi.

Sound resonates,
steam rises,
the aroma of matcha drifts through the air.

Experience Japan with all five senses.

Below that, add a brief description:

NIGICHA’s interior features
a Japanese modern design centered on the warmth of wood.

It blends traditional Japanese aesthetics
with contemporary sensibilities.

Rather than flashy presentation,
it is a space to savor flavor and time in tranquility.

Delivering Japan’s Blessings in Every Grain and Cup

Grace Image

We do not seek to flaunt Japan’s food culture.

Rice and tea returning
to the center of daily life.

Warmth and stillness
existing simultaneously.

For this purpose,
we select materials,
design,
and arrange spaces.

Not a special experience,
but a sense of continuity.

That is
the design of NIGICHA.
